Epic Veggie Sandwich

As plant based foodies, we’re always looking for fun ways to incorporate more veggies into our diets. Because let’s be honest, you can only eat salads for so many days in a row and stay sane. Veggies are the ultimate nutrient delivery method. If you’re like Ben, you can smash them in any way, shape, or form. But, he’s also a freak of nature. If you’re like me, you’re slightly more selective (i.e. picky) about the veggies you eat. This epic veggie sandwich is the perfect way to not only get multiple servings of veggies in one meal, but also still be happy that you’re eating them.

This powerhouse sandwich packs a huge serving of veggies into one delightfully crunchy, fresh meal. The crunch factor is REAL with this sandwich, and that’s part of what makes it so damn GOOD.

With a myriad of veggies including cucumber, radish, carrots, bell pepper, and sprouts, this meal leaves you feeling energized and ready to tackle the rest of your day.

None of the flavors of these veggies is particularly strong, which is what makes it work so well. Everything is just light, crunchy, and delicious. The sprouts add a big boost of nutrients as well. Sprouts are great to add into any sandwich for an extra kick of filling goodness.

This veggie sandwich is also great for meal prep since you can slice your veggies beforehand, and simply assemble on the morning of (or night before).

In addition to the veggies making this monster sammich epic, there’s also the SPREAD. Yummy, creamy, delightful goodness. We’re huge fans of Kite Hill, which is a company that makes almond milk based products. We try to steer away from dairy as much as we can, and Kite Hill offers this spread that tastes JUST like cream cheese. We used the chive flavor on this veggie sandwich, and it completely brings it all together.

So the next time you’re thinking that your diet is lacking in the veg department, whip one of these bad boys up. Your body will be so happy you did. And so will your tastebuds!


Cucumber (sliced thin)

Radish (sliced thin)

Carrots (shredded)

Bell Pepper (sliced)


Whole Grain Bread

Kite Hill Chive Spread


1. Build your sandwich – we like going in this order: spread, cucumber, radish, carrots, bell pepper, sprouts, more spread.
BUT, you can make it however you want!

2. Use both hands to eat this monster.

    I love sprouts! I didn’t really eat them till we moved to Japan. They are everywhere here and I am thankful!

      Sprouts are the BEST! And we honestly didn’t really discover that until we gave up meat. They add so much oomph to a sandwich like this, and are crazy packed with nutrients!

    I love veggies, so this looks and sounds amazing to me! I’ve actually never had sprouts before, but I’ve really been wanting to try them on a sandwich.

    Yum, that looks good! I usually add turkey or chicken to my sandwiches but there are days when I don’t want to eat any meat so more veggies it is! The crunch factor is key!

    You know I love to meal prep =o) This sounds like my kind of sandwich too! Also I had no idea they have almond milk cream cheese! Where do you get that stuff?

      Haha we do too! And it’s the BEST! We’ve found it at Whole Foods, Sprouts, and some Kind Soopers. Whole Foods is usually a pretty good bet though. It’s SO good! It doesn’t have that weird taste that some non dairy spreads do. Tell us what you think!

    okay i have been absolutely DYING to try kite hill – do i get it at whole foods?!?! and this sandwich looks beyond delicious. some people hate sprouts, but i love them so much. they’re like, refreshing or something? idk. but YUM.
