We’re both a little obsessed with breakfast. Like, to the point where it’s baffling to us that most restaurants don’t serve breakfast all day (someone should work on fixing that ASAP). So, breakfast for dinner (or for lunch, or brunch, or snack) is a common occurrence in our house. Currently, one of our favorite go-to meals are veggie omelettes. They’re packed with nutrients, are high in protein and fiber, and are super fast to whip up (and they don’t use ‘every dish in the house’ to make, as Ben would say).
